Scrambled
Eggs with Tomatoes

Ingredients:
2
tomatoes
2 eggs
1 t. salt
4 t. vegetable oil
1/2 t. green onions (chopped)
1/2 ginger root (chopped)
1 t. sugar

DIRECTIONS:
- Soak
the tomatoes in hot water for 1 minute. Remove and
peel off the skin and chop into small cubes
- Beat
eggs and mix with the salt.
- Heat
2 t of oil, stir-fry the eggs, and remove when well
done. Heat the other 2 t of oil and add the add
the green onion and ginger, stir-fry for a second,
and then add the tomato and the sugar. Stir-fry
for another 30 seconds. Add the scrambled eggs into
the mixture. Mix well and serve.
