Steamed
Egg Custard (Beijing Style)

Ingredients:
3 eggs
1 t. salt
2 t. soy sauce
350ml water
1 t. dried shrimp
1 t. sesame oil
1/2 t. spring onion ( chopped)

DIRECTIONS:
- Soak the shrimp in warm water
until they soften. Take out and cut into small sections.
- Beat the eggs in a bowl and then
add soy sauce, salt, sesame oil and water. Blend
the mixture for 30 seconds.
- Place the bowl in a steamer and
steam for about 15 minutes. Sprinkle with the shrimp
and onions. Serve and enjoy!
