Chicken Strips over Rice

Ingredients:
- (1)
1/4 lb.(120 g.) carrots
1/4 lb.(120 g.) bamboo shoots
5 Chinese black mushrooms (soaked)
- (2)
2 T. soy sauce
2 t.sugar
1 t. salt
1 t. chicken fat
- (3)
2 T. each: cornstarch, water (mixed)
- (4)
2 t. black vinegar
1/4 t.pepper
1 t. sesame oil
- (5) 2 T. coriander
- (6) 1/4 lb.(120 g.) chicken
meat (cooked)
- (7) 8 c. broth
- (8) 4 c. cooked rice

DIRECTIONS:

Tear chicken into strips. Cut (1) into strips
and set aside.

Bring broth to a boil. Add (1) and cook until
done. Add (2) and chicken strips. Bring to a boil.
Thicken with (3). Pour over rice.

Season
with (4). When serving, garnish with coriander.
