Steamed
Chicken

Ingredients:
-
(1)
1 t. soy sauce
1/3 t. salt
1 t. cooking wine
1/2 t. sesame oil
1 t. cornstarch
-
(2)
1 c. broth ( or water) and juice from steamed
chicken
1/2 T. soy sauce
1/2 t.sesame oil
-
(3)
1-1/2 t. cornstarch
1 T. water
(mix the above two)
-
(4)
2/3 lb. (300 g.) chicken legs
-
(5)
Chinese black mushrooms
-
(6)
stalks of green onion
-
(7)
sliced ginger root

DIRECTIONS:
-
Cut
chicken legs into pieces. Soak musharooms in cold
water until soft and cut into pieces. Marinate
chicken and mushrooms in green onion, ginger,
and (1) for 10 minutes.

Place
in bowl and steam over boiling water for 20 minutes
or until done. Pour out liquid from bowl; retain
liquid for (2). Invert bowl into serving plate.

Blanch
bok choy in boiling water until done and use as
garnish for edge of serving plate.

Bring
(2) to a boil, then thicken with (3). Pour over
chicken and serve.
