Soy
Bean Stewed with Beef -
serves 4 |

Ingredients:
-
(1)
3 cloves of garlic (crushed)
2 slices of ginger root
-
(2)
1 T. cooking wine
2 T. soy sauce
-
(3)
2 t. cornstarch
1 T. water
(mix the above two)

(4)
1-3/4 oz. (50 g.) soy beans
(5) 1/3 lb. (150 g.) beef shank
(6) 1/4 lb. (100 g.) tomatoes
(7) 6 c. water
(8) 1 T. vegetable oil

DIRECTIONS:

Soak soybeans in water until soft (about 4 hours).
Cut beef and tomatoes into pieces and set aside.

Heat 1 T. oil in preheated wok. Quickly stir-fry
(1) until fragrant. Add water and bring to a boil.
Add beef, soybeans, and (2). Bring to a boil,
reduce heat, and simmer for 1 hour. Add tomatoes
and simmer for 10 more minutes. Thicken with (3)
and serve.
