Noodle Slice Soup - serves 4
 

Ingredients:

  • (1)
    5 cup flour
    1-1/2 cup water

  • (2)
    1 T. cornstarch
    1 t. cook wine
    1 t. soy sauce

  • (3)
    6 mushrooms (soaked in water until soft)
    1/2 lb (200g) bamboo shoots (cooked)
    1/4 sliced carrots

  • (4)
    2-1/2 t. salt
    1/2 t. sauce
    1/4 t. pepper
    1 t. soy sauce
    1/2 t. sesame oil
    2/3 lb (300g) sliced pork
    4 section green onion (2-3cm each)
    10 cup water (or broth)
    4 T. vegetable oil

DIRECTIONS:

  1. Mix (1) into dough, and make it into a long cylinder (diameter about 3 cm). Then put it into cold water for about 20 minutes to strengthen the elasticity.
  2. Soak the sliced pork into (2) and marinate for 10 minutes.
  3. Slice the bamboo shoot.
  4. Heat the vegetable oil, and cook the port until its color changes, then remove from heat. Put the green onion into the remained oil and stir-fry until fragrant, then add water until it reaches a boil.
  5. Put (3) into the water, take out the dough and pinch into thin slices, and then put them into the boiled soup until done.
  6. Add the cooked pork and put (4) together. Now enjoy it!
