Lotus
Seeds with Chicken -
serves 4 |

Ingredients:

1-1/4 tsp salt
1-1/2 tsp cook wine
1 tsp cornstarch
(2)
3 softened mushrooms
1 oz. (30g) peas
1 oz (30g) cooked carrots
(3)
1/2 tsp cook wine
1/4 tsp salt
1/2 tsp sesame oil
1 tsp cornstarch
3 tbsp water
1-2/3 oz. (75g) chicken breast
4-1/4 oz. (120g) fresh lotus seeds
3 sections green onions
2 tbsp vegetable oil

DIRECTIONS:
- Cut chicken into small cubes,
pour (1) on the cubes and let sit for 10 minutes.
- Cut (2) into diamond shapes. Boil
lotus seeds for 4 minutes and drain off the water.
- Heat the oil, stir-fry the green
onion and, when fragrant add the chicken. Cook it
until the color changes to white.
- Add (2), continue to stir-fry,
then add (3) and the lotus seeds.
- Mix and Serve. DELICICIOUS AND
HEALTHY!
