Chinese Chicken with Rice - serves 4
 

Ingredients:

  • (1)
    1 Tbsp ginger wine
    3 Tbsp soy sauce
    1/2 tsp salt
    1 tsp sugar
    2 tsp sesame oil
    1 Tbsp minced green onion

    (2)
    1/3 lb. (150g) bamboo shoots
    1/3 lb. (150g) carrots
    4 tsp chicken fat

    2/3 lb. (300g) chicken
    1-1/4 lb. (560g) germinated rice
    3-3/4 c. water

DIRECTIONS:

  1. Cut bamboo shoots and carrots into small cubes. Be careful that you don't hit your fingers!
  2. Cut the chicken into thin, bite-sized pieces, soak in (1) for 20 minutes.
  3. Soak rice in water for 20 minutes, add (2) and mix. Boil this mixture at a high-heat for 5 minutes, add the soaked chicken, the turn the heat to low for 15 minutes.
  4. Remove from the heat and cover the rice for 5 minutes before serving.
