Scrambled
Eggs with Tomatoes

Ingredients:

| DIRECTIONS:
-
Soak the tomatoes in hot water for 1 minute. Remove
and peel off the skin and chop into small cubes.

Beat eggs and mix with the salt.

Heat 2t of oil, stir-fry the eggs, and remove when
well done.
- Heat
the other 2t of oil and add the green onion and
ginger, stir-fry for a second, and then add the
tomatoes and the sugar. Stir-fry for another 30
seconds. Add the scrambled eggs into the mixture.
Mix well and serve.
