Chinese Sweet and Sour Pork - serves 4
 

Ingredients:

  • 1 lb.(500g) boneless pork
    1 t. salt
    2 eggs
    7 oz (200g) bamboo shoots
    4 t. cornstarch
    1 green pepper
    4 cups of vegetable oil
    4 t. minced garlic
    2 t. chopped spring onion

    For sauce:
    5 t. sugar
    3 t. vinegar
    2 t. soy sauce
    2 t. tomato ketchup
    1 cup (120ml) water
    1/4 t. salt
    1 t. cornstarch
    (mix all these together)

DIRECTIONS:

  1. Cut the pork in diamond shape slices (3cm) and mix with salt. Then add some water to marinate the cornstarch and the eggs for about 15 minutes. Make sure the pork is fully enveloped in the mixture.
  2. Cut the green pepper and the bamboo shoots into small pieces, similar with the pork, and set aside.
  3. Heat oil and deep-fry the pork until the color changes to golden. Add bamboo shoots into the oil and remove immediately together with the pork. Place on a plate away from the heat.
  4. Pour out the oil to another wok, only leaving about 2 t. Heat the remaining oil, add the sweet -and-sour sauce until boiling. Stir it until it thickens. Pour it on the pork. ENJOY!
